Ketchup is pickled but as far as I'm concerned it's fit for consumption by living organisms that thrive at room temperature, so of course it's going to be more vulnerable to spoilage in a cupboard. * +

Just face it people, you don't use soy sauce like the asians do. Otherwise you wouldn't be debating on how to preserve that big bottle you use twice to three times a year.
Lagering only counts with freshly bottled beer, it's not a desired trait for condiments.
Go get that jar that's been in the root cellar for three years, Nellie. That mayonnaise should be nicely fermented by now.

I must be part asian then cuz i go through about 2/3 of those big bottles a year. Actually i better add it to my shopping list
