I keep mine in the fridge. There's enough sugar and vinegar in it for it to last several months if not years in a cupboard though, as long as it's not in direct sunlight and doesn't get too warm, otherwise it will separate out and you'll end up squirting watery tomato vinegar onto your chips. *
