Games that do away with random encounters usually replace them with scripted/mandatory battles that you can't avoid. In games with R.E. you can usually get skills or items that can increase or decrease the amount of battles, also possible escape help from battles too. * +

I'm currently playing Octopath Traveler and it has random encounters, turn-based combat and tactical battles. You can not spam A and hope everything dies. Also the bosses have tons of HP too. And it is NOT grindy if you manage your money ok, you should not buy all the equips in a new town etc. Because they offer things that are way out of your league on your first visit. + it is a Square-Enix release... * +
