I have chosen English UK as the dictionary and yet it still brings up things like recognize, categorize, standardize etc when we don't use the Z in the UK, we use S and the Americans use Z.

In Language+Text panel in System Preferences, select the tab Text. Next to the label Spelling there should be a drop down list where you can select a language to be used by the spell checker. Some programs have their own spell checker that differs from the OS spell checker so you'd wanna check that too. * +
