Let's listen together.... (blossom)
(They have not appraised Allah with true appraisal, while the earth entirely will be [within] His grip on the Day of Resurrection, and the heavens will be folded in His right hand. Exalted is He and high above what they associate with Him.) Quran 39.67 * +

Do NOT take it for granted that each of them is saying the complete truth.
Ask any of them: do you consider yourself having the absolute truth, or there is a margin for you to do mistakes and err?

I really dislike it how many (including muslims) prefer the such debate/discussion only for the purpose proving the other is wrong. Why not we consider each conversation as an opportunity to learn and discuss? Why not to open our minds and listen why others believe so and so.
-
Okay, at least let's have some respect the way we talk about others. I'd always emphasis that ethics and morals are so important as knowledge (even more than knowledge sometime).
-
If we sit and consider the Quran as our first pure source, then I trust many gaps will be filled. Other gaps are not necessarily to be filled, as people have always been different in their viewpoint since begining of history. (read) * +

Simply: Sufism that promote strong correct beliefs and good deeds and helping others, etc... all that,,, then no problem with it. Sufism concept has changed over time. In the very past time, it was basically about taking a little in this life, while doing a lot for others and for worship. No problem in that.
It is mentioned in a Hadith that Prophet pbuh said (I pray and I sleep, I fast and I break fasting, and I marry women. Whoever does not desire my Sunnah is not part of me)
(blossom) so best we learn from this to be balance, in worship, in life, and everything.

Yet, some so called sufis have innovated very weird and odd rituals, or beliefs in their master that cannot fit except to ALmighty Allah. That is the big problem (dislike) * +

It was narrated from Anas that there was a group of the Companions of the Prophet,
one of whom said: I will not marry women. Another said: I will not eat meat. Another said: I will not sleep on a bed. Another said: I will fast and not break my fast.
News of that reached the Messenger of Allah and he praised Allah then said: What is the matter with people who say such and such? But I pray and I sleep, I fast and I break my fast, and I marry women. Whoever turns away from my Sunnah is not of me.

Jabalah bin Suhaim reported: We were with Abdullah bin Az-Zubair (May Allah be pleased with them) in a
time of famine, then we were provided with dates. (Once) when we were eating, Abdullah bin Umar (May Allah
be pleased with them) passed by us and said: Do not eat two dates together, for Messenger of Allah (PBUH)
prohibited it, unless one seeks permission from his brother (partner).''
[Al-Bukhari and Muslim].
Commentary: This Hadith has a lesson for today's Muslims whose majority seems to be ignorant of good manners.
It is commonly seen at feasts that somebody, unconcerned about others around him, will be engaged in filling his
own plate with food. Such a greed of eating is against the Prophet's teaching and guidance which inspire us to have a
due regard for others and not to serve our own purpose alone.

Why are hadiths needed if the Quran and faith in Allah are all that's required?

Before answering this, I am curious about when you said '... all that's required'
Just curious where is that assumption from? * +
