Ultra-Orthodox Jews of the Hasidic Pinsk-Karlin group carry the ritual baby donkey during the Redemption of the First Born Donkey or in Hebrew Pidyon Peter Chamor ceremony in a neighborhood near the religious Mea Shearim area of Jerusalem. The tradition of the Redemption of the First Born Donkey is part of the 613 laws commemorated in the Jewish Bible. * +

The questions here: does anyone know what significance behind these celebrations? when was it started? or where can we find about it in holy books? (dontknow) * +

It says in exodus 13.13 and 34.20 and numbers 18.15. Basically it says and you should redeem the first born donkey. The Talmud explains one line of reasoning, since it was the donkey that was the method of transport that helped the Jews stuff out of Egypt, God made the first born donkey have a certain sanctification and therefore has to be redeemed. * +

20 but you are to buy back every first-born donkey by offering a lamb in its place. If you do not buy it back, break its neck. Buy back every first-born son. No one is to appear before me without an offering.Next verse * +

20 The firstborn of a donkey you shall redeem with a lamb, or if you will not redeem it you shall break its neck. All the firstborn of your sons you shall redeem. And none shall appear before me empty-handed. * +
