who heard from a friend who.....
no really... a friend was telling me how he loved beetroot leaves... that they eat it as one would spinach etc.. has anyone here are I prepared beet leaves... I usually bin them but will give it a go if it is similar to spinach as I love spinach. * +

Beetroot is the Devil's vegetable. Spinach on the other hand is alright by me. * +

Here's a tip: when you're washing and peeling the beets, and you trim off the green leafy tops, don't toss them away! The greens and the stems are edible, and make a great substitute for any green such as spinach, swiss chard, and bok choy. They can be steamed, sauteed, braised, added to soups, and eaten raw.
