Um nothing, well unless the phone is brended to a network, then flashing generally means you'll be using a Generic Firmware (Generic FW is SE FW the way the phone was designed) * +

Oh SEUS dont always get the FW first, and FOTA (the phones update feature is normally the last to get it, so you may not have the latest) * +

Well i am using generic software and i think they stopped releasing k800 firmware a while ago unless i'm mistaken what i wanted to know in cases of flashing if you already got generic software and your phone starts giving problems whose to say that new firmware won't start acting up *
