rooting gives you permission to muck about with system files, this gives you full control of your mobile/tab, replace boot animations, change individual icons, uninstall system apps, it also allows for flashing of roms, these can either be stock Roms or vanilla roms or complete rewrites like cyangen mod roms, rooting also allows installation of apps that need root permissions to work * +
