Ive never rooted an HTC before, but if its like how we do it with the X10 you simply install recovery, then you boot into recovery and backup, make sure you got over 1GB mem in your mem card, then when ever you want to either bring back the unrooted ROM or come back from a custom ROM to normal then you just restore from recovery, with everything exactly the way you left it. * +

very similar to how polo said. You install recover, then boot in to recover by holding down the down volume key and switch phone on. choose recovery, do a nandroid backup to back everything up and then install the rom that you want (note rom should already be on the sd card so you can select it) as for backing of apps. i just formatted its easier and no probs and then redownloaded my apps but there are backup app managers available on market * +
